When in Rome… Så selvklart måtte vi forbi Raffles Hotel at prøve deres verdensberømte Singapore Sling, der blev kreeret på selvsamme hotel af den legendariske bartender Mr. Ngiam Tong Boon i 1915 i The Long Bar, hvor den stadig serveres. Og det i ganske betydelige mængder. Der bliver nemlig langet op mod 1000 slings over disken hver dag. Og dem har de helt styr på. Det er i alle tilfælde den bedste Singapore Sling, jeg nogensinde har smagt. Måske atmosfæren også hjalp på oplevelsen, historiens vingesus var allestedsnærværende og jeg følte mig hensat til starten af det forrige århundrede.

Den forfriskende og eksotiske drink er i øvrigt baseret på den danske kirsebærlikør, Cherry Heering. Og man må (nærmest skal) smide skallerne fra de jordnødder, der står på bordene på gulvet. Og så skal jeg nok også stoppe med facts om drinks for denne gang og med en varm anbefaling af både Raffles og deres slings og sliders, hvis I skulle lægge vejen forbi Singapore.

ENGLISH RECAP: When in Rome… So of course we had to drink Singapore Slings at The Raffles Hotel where the legendary drink was created in 1915. And they still had the hang of it and I enjoyed the best sling I’ve ever tasted. And some lovely snacks.

 Udover den meget fantastiske asiatisk-inspirerede mad, som vi gaflede ned i Singapore, blev det også til et par miniudgaver af den allestedsnærværende burger. Begge gange stærkt akkompagneret af dejlige drinks! Det er lidt som om det er et tema i Singapore – skal du ha’ drinks, skal du også ha’ burgere. Og det er jo egentlig ikke en helt dårlig idé..Første omgang af burger x drinks kombi’en fik vi på baren ‘Lantern’ på Fullerton Bay Hotel, der ligger med en fantastisk udsigt udover vandet, Singapores skyline og det gigantiske Marina Bay Sands hotel.

De små burgere – eller sliders, som de af en eller anden grund nu hedder – var virkelig lækre og bøffen var selvfølgelig lavet af mørt og perfekt mediumstegt wagyu-kød. Som et ret ekstravagant og velsmagende lille sidekick til burgerne fik vi også en omgang trøffel-fritter med mayo og ketchup. Mener at kombien af fritter + tre sliders kostede ca. 32 singapore dollars – eller ca. 150 kroner.

Selvom det naturligvis er obligatorisk at drikke Singapore Slings i Singapore, hoppede vi i denne omgang på udvalgte Halloween-specials drinks. Min kunne noget med mandarin, gin, lime og andet syrligt – og smagte dejligt!

Meeen intet besøg i Singapore kan siges at være fuldbyrdigt uden en Singapore Sling indtaget på det historiske Raffles Hotel (opkaldt efter Singapores grundlægger, Sir Stamford Raffles). Så Emily, Acie og vores danske ‘guide’ Karin spenderede vores ‘frieftermiddag’ med sliders og slings i vaskeægte kolonistil på Long Bar på Raffles Hotel.

Det siges at sling’en er opfundet af en bartender, der arbejdede på Long Bar på et tidspunkt før 1915. Den blev originalt kaldt en gin sling og består af gin, kirsebærlikøren cherry heering (der som et lille kuriosum er dansk produceret!), og frisk appelsin-, ananas- og lime juice, men der er eftersigende flere alternative versioner, der ‘claimer’ at være den originale.

Fred være med det. De der slings var særdeles gode og der var noget herligt ‘old world in a new country ‘over at sidde der på Long Bar og sippe Singapore Slings, spise jordnødder og smide skallerne på jorden (det er åbenbart obligatorisk!), mens vi vendte verdenssituationen.

Burgerne – de små sliders – var måske nok lige til den kedelige side uden hverken fikse mayo’er, fikst tilbehør, men til gengæld med en anelse for tørre bøffer – de slog i al fald ikke dem fra Lantern i lækkerhed, men det kunne dog ikke slå os ud af kurs – det var en helt perfekt eftermiddag!

Prisen er lidt til den pebrede side – men sådan skal det vel være med verdensberømte turistattraktioner – en omgang sliders og en sling kostede ca. 53 singapore dollars per mand. Hvilket er ca. 240 kroner.

Månadens cocktail: En missförstådd 100-åring.

Glöm de tropiskt söta Singapore Sling som du har druckit förut. På onsdag får du smaka det spritsiga originalreceptet från Raffles Hotel i Singapore. Vi tjuvstartade i fredags och passade på att snicksnacka lite med Tom Surma, barchef på Familjen (en av Sveriges absolut bästa barer enligt White Guide), och Cocktail Hours egen cocktailmaestro.

CH: Varför valde du Singapore Sling?

TS: Dels så är det en väldigt trevlig drink. Dels är det en drink som alltför sällan görs enligt originalreceptet. Singapore Sling skapades på Raffles Hotel i Singapore någon gång mellan 1910 och 1915, men på 70-talet ”moderniserades” receptet och idag bygger det mycket på tropiska smaker.

CH: Så vad ska en riktig Singapore Sling innehålla?

TS: Gin, Cherry Heering (likör), Bénédictine D.O.M. (kryddig likör), lime och soda.

 

CH: Vad gillar du mest med Cocktail Hour?

TS: På vardagkvällar har jag mer tid för att ge varje drink den omsorg den förtjänar. Cocktail Hours gäster är dessutom mer intresserade och nyfikna på oprövade smaker. De får chansen att testa något annorlunda, att botanisera och fundera kring smaker. Det finns alltid något att prata om! Men vad tyckte ni om Singapore Sling?

CH: Gott och spritsigt! En nyårsdrink!

TS: Och på nyår får man byta ut sodan mot champagne!

The long and illustrious history of the Singapore Sling is as nuanced and vibrant as the drink itself. It is the perfect combination of ingredients to play homage to the intrepid cocktail creators and drinkers of yore, while spanning the globe in a single glass.

A proper sling combines a formidable amount of well-measured spirits from Sweden, England and France, and the exotic fruit juices of South East Asia—where those Swedes and Brits and other ex-pats, were discovering the pleasures of creative imbibing.

While the “classic” is a type of perfection to be counted on, like any global traveler with a wealth of perspective, there is always room for some experimentation and evolution.

With this in mind, fast forward to Berlin 2013, where the forefront of everything cool is exuberantly sharpening its edge. It was here, last week during Bar Convent Berlin, one of the world’s largest convergences of liquor and spirits, that this age-old cocktail rose its head above the din of clinking glasses, looking as fresh and vibrant as the coolest, young Berlin hipster to have ever hit the scene.

This was thanks to Cherry Heering (one of the essential ingredients of the classic sling), and its wildly fun recipe for re-invention: the Peter F. Heering 2013 Heering Sling Competition

Verdens bedste Singapore Sling on Smag og Behag.dk

D. 8. oktober sendte smagogbehag og Spis Bedre exam. sommelier Chanet Deleuran af sted til Berlin for at være en del af dommerpanelet ved 2013 Sling Award Finalists Berlin Bound – finalen ved verdensmesterskaberne i Singapore Sling.

Over 600 havde indsendt bidrag til de indledende runder, hvoraf kun 27 deltagere gik videre til sommerens semifinale i New York. Her var Danmark repræsenteret af deltagere fra Drinksmeister og Skt. Pauls Apothek, der desværre ikke blev blandt den top fem, der skulle dyste i Berlin.

Finalen fandt sted på den spektakulære bar og natklub Le Croco Bleu, hvor de fem finalister fra henholdsvis USA, England og Spanien fightede for fuld skrue for at fremstille verdens bedste Singapore Sling.

Den hæderkronede gamle Peter F. Heerings Cherry Heering-likør, der indtil for 6 år siden var dansk, har kultstatus på verdens mange barer, og respekten blandt deltagerne i finalen var imponerende og markant.

Det blev Michael Flannery fra USA, der vandt med en elegant og moderne Singapore Sling-version med navnet “Highland Sling”. Vinderdrinken bestod af Cherry Heering, tequila, frisk ananasjuice, mandarinjuice, frisk limejuice, Benedectine, Green Chartreuse, Dale DeGroff Pimento Bitters og et mist af Del Maguey Chichicapa.
