EUROPEAN BARTENDER SCHOOL

We are the largest bartender school in europe, and are educating more than 3000 bartenders a year on an international basis.
We have just launched a new training center in Copenhagen, and therefore we are looking for help building up our center. We are teaching our students throughout 4 weeks of mixology, bar efficiency, theory, free-pouring and sales&marketing.
In our bar efficiency program we put our students behind 11 fully equipped bars and here we go by the learning-by-doing principle. Therefore we use real bottles with colored water for this part of the training, so we can get speed, precision and efficiency builded into our students.

Cherry Heering: Highlight at Equipotel 2012 challenge in Brazil!

On the last September 12th, the city of São Paulo, Brazil, held the largest hospitality and gastronomical event in the Latin America: Equipotel. The gastronomic area launched a competition where 16 professional bartenders from the most respected bars and restaurants of the city were able to demonstrate their skills as mixologists. Among them was Rogério Rabbit, four-times brazilian bartender of the year, who created the recipe “Seleta de Surpresas” (Selection of Surprises), on which Cherry Heering was the main ingredient. The unique flavour of Peter Heering combined with jabuticaba, a very particular brazilian berry, and other ingredients granted him the first prize of the competition, with a total score of 90 points out of 100 possible.

Considering the great memories Cherry Heering brought back of family simchas as I and later my kids were growing up, considering I discovered it on a kiddush on my very first Shabbat on these American shores, I hust had to incorporate it into the Rosh Hashana meals.

SYR, obliged with two delightful dessert recipes and here they are:

SYR’s Cherry Heering Sorbet
Serves 6

Ingredients

2 pounds fresh or frozen cherries, pitted and halved.
1 cup sugar
1 cup water
1 teaspoon Cherry Heering
Juice of 1 lemon
Pinch of salt

Directions
Bring cherries, sugar, water, and lemon juice to a slow boil in a heavy saucepan, stirring until cherries are soft
and liquid is syrupy. Cool to room temperature.
Add teaspoon of Cherry Heering. Blend in a food processor until smooth with minimal pulp.
Freeze with ice cream maker according to instructions, or freeze in containe.
Blend once more in food processor and refreeze in airtight container.
Scoop and serve.

SYR’s Cherry Heering Syrup
Serves 24

Ingredients

2 pounds fresh or frozen cherries, pitted and halved.
1 cup sugar
1 cup water
1 teaspoon Cherry Heering
Juice of 1 lemon
2 tablespoons cornstarch
Pinch of salt

When I first arrived in Richmond, Va, in 1962 – straight from Montevideo, Uruguay, where I grew up – my first Shabbos on American shores, my parents and I attended a big kiddush in our new shul. Alongside the standard kugel, chulent, pastries and spirits, I got my first taste of a very delicious dark red liqueur with a strong, not overly sweet, black cherry flavor. It was love at first sip for me and Cherry Heering! Through the years, whether in Richmond, NY, Detroit, Eretz Yisroel, or wherever life’s path took me, there was always that familiar, delicious bottle of Cherry Heering calling my name at every kiddush, every simcha, every family get together.

Like an old friend, seeing Cherry Heering among the liqueurs adorning the table, brings back warm memories and great moments of my past. At each son’s bar mitzva Cherry Heering was there, a guest tmidi – a constant complement to our simchas, warming hearts, with its distinct familiar cherry flavor, admittedly the cordial of initiation to each of my three sons.

After the 90′s, it disappeared from Jewish liquor stores and I missed it. Now it’s back, as good as ever along with an additional coffee flavour choice! Since 1818 Cherry Heering, has been appearing all over the world and is sold in over 100 countries. In 1936 it became the main ingredient of that most celebrated of cocktails the Singapore Sling. Not all the ingredients of this cocktail are kosher today but you can still make delicious drinks with Cherry Heering and Coffee Heering. Here are some of my favorite ones:

coffee sourz
1 part Heering Coffee Liqueur
1 part lemon juice
1 part simple syrup
Fill a shaker with ice. Add ingredients, shake well and serve in a rocks glass. Garnish with a lemon slice and a cherry.
cherry royal
1 part Cherry Heering Liqueur
4 parts champagne or sparkling wine
Pour Cherry Heering liqueur and champagne into a champagne flute and serve ice cold.

cherry fizz
2 oz Cherry Heering Liqueur
Juice of 1/2 lemon
Carbonated water
1 Cherry
Shake Cherry Heering and lemon juice over ice and pour into a highball glass with 2 ice cubes in it. Ad carbonated water and a cherry.

I just picked a few bottles (full size and mini size for the mishloach manot on Purim) of each Peter Heering flavor at Liquors Galore (1212 Avenue J in Brooklyn 11230) but it’s also available all over.

SYR’s Cherry Heering Syrup
Serves 24

Ingredients
•2 pounds fresh or frozen cherries, pitted and halved.
•1 cup sugar
•1 cup water
•1 teaspoon Cherry Heering
•Juice of 1 lemon
•2 tablespoons cornstarch
•Pinch of salt

Directions
1.Bring cherries, sugar, ¾ cups water, and lemon juice to a slow boil- medium heat, in a heavy saucepan, stirring until cherries are soft and liquid is syrupy.
2.Stir 1/4 cup lukewarm water and cornstarch in a small bowl until smooth. Pour and stir into boiling cherry syrup. Boil, stirring constantly, until liquid thickens, for about 1 minute.
3.Cool to room temperature, add 1 teaspoon of Cherry Heering. Store in syrup bottle or container.

The Peter Heering distributor in the US had sent us a bottle of Cherry Heering and a bottle of Heering Coffee Liqueur for Purim; the Coffee Liqueur was finished so I decided to use the last of the Cherry Heering and the results were delicious!
