(New Year’s Day Champagne Recipes)

Champagne and the New Year are matching bookends. You must have both to truly ring in a festive 2011. This champagne cocktail originated in the fashionable parlors of the upper west side in New York City. Cherry Heering is a brandy-based Danish cherry liqueur. You can find this liqueur at any specialty liquor or package store. Our test kitchen at Foodcreate.com has been sampling this recipe all day long. It is really outstanding. The maraschino cherries combined with angostura bitters create a tangy and rather pungent odor and sensation. Angostura lends a dramatic effect to this wonderful cocktail. Enjoy. 3 maraschino cherries, plus 3/4 ounce syrup from the jar
Superfine sugar
3 dashes of Angostura Bitters
2 brown sugar cubes
1/2 ounce Cherry Heering or cherry liqueur
4 ounces chilled Champagne
1. Moisten the outer rim of a flute with 1/2 ounce maraschino cherry syrup and coat with superfine sugar.
2. Sprinkle the bitters over the sugar cubes.
3. Add the Cherry Heering, maraschino cherries and the remaining 1/4 ounce of maraschino cherry syrup to the flute.
4. Top with the Champagne and add the sugar cubes.

SAVOY MULLED WINE
This is a real experience in a drink — you drink the hot mulled wine through cold, creamy cinnamon foam on top. It’s really worth putting the effort in.
40ml rum
40ml full-bodied red wine
20ml cranberry juice
25ml Cherry Heering
(or other cherry liqueur)
Double cream
Cinnamon sugar (mix ground
cinnamon and granulated sugar)
Shake the first four ingredients together, strain and heat. Pour into a martini glass. Top with double cream (pour over the back of a spoon to keep the layers separate), then top with cinnamon sugar.

THE MIDNIGHT SUN COCKTAIL
You will need:
1 oz. gin
1/4 oz. apricot brandy
1/4 oz. peach brandy
1/2 oz. cherry heering (Danish cherry brandy based liqueur)
2 oz. champagne
Shake gin and brandies together very well and pour in a chilled glass. Then add 2 oz. champagne, stir, and serve immediately.
And then make another one right away because they’re super scrumptious!!!

…Long Bar and Singapore Sling
The best known feature of the current Raffles Hotel is the Long Bar which is considered one of the great bars of the world. The Long Bar is where bartender Ngiam Tong Boon invented the famous cocktail called the Singapore Sling around 1915.
The Singapore Sling is a mixture of pineapple juice, gin, Cherry Heering and Benedictine. Slings are still served at the long bar but most of them are mixed and dispensed using a machine. What is believed to be an early Singapore Sling recipe is still on display at the Raffles Hotel Museum.

HEERING COFFEE LIQUEUR. I haven’t seen much written about this new product from the folks who brought us the venerable Cherry Heering (an essential ingredient in the Singapore Sling), and the reviews I have seen are generally lukewarm. It doesn’t taste much like coffee — my wife had no idea it even contained coffee when she tasted it blind. But boy oh boy, is it delicious. An alchemy of dark Caribbean rums, cacao and coffee beans, it’s velvety smooth, rich, and sweet with a bitter edge. It’s great on its own as an after-dinner drink and makes a mean alcoholic milkshake, too. And it’s miles ahead of Kahlua (the only coffee liqueur most people have tried), which tastes syrupy and one-dimensional by comparison. (If you’re looking for a more intense coffee experience, try Galliano Ristretto, an espresso-based liqueur.)

Ingredients
• 3 cl Heering Cherry Liqueur
• 3 cl Vodka
• 1 twist of Lemon Peel
• Crushed Ice
Preparation
Chill the glass, then fill it with crushed ice. Mix the cherry brandy and the vodka together, and pour into the glass. Garnish with lemon peel.

• 1 part Heering Cherry Liqueur
• 1 part Soda
• 1 part Orange Juice
• cube of Ice
Preparation
There are many good cherry liqueurs you can use, but I prefer Heering. Add one share of the liqueur. Then you add one share of Soda. For a sour sling use Tonic (most people prefer the drink without Tonic). Afterwards you fill the glass with Orange Juice and ice cubes.

SERVE IN A:Wine Goblet

Ingredients
• 6 oz Champagne
• 1 shot Heering Cherry Liqueur
• 1 shot Brandy
• ½ shot Triple Sec
• 1 splash Sour Mix
• 1 dash Grenadine Syrup
• Fruit
Preparation
Pour all ingredients (except champagne and fruit) over six crushed ice cubes in a brandy snifter or goblet. Stir contents, and add slices of fruit (orange, lemon and lime). Top with champagne, and serve.
